Easy Yogurt Cake

A comforting and simple yogurt cake that combines creamy yogurt and citrus zest for a delightful treat.

Ingredients

  • 1 cup (250g) plain yogurt
  • 2 leveled cups (250g) all-purpose flour or light spelt flour
  • 1/2 cup (100g) white or unrefined cane sugar
  • 1/2 scant cup (approximately 80g) vegetable oil
  • 2 eggs, at room temperature
  • 2 tsp baking powder
  • 1/2 tsp vanilla essence
  • Zest from 12 lemons
  • 1 pinch salt
  • 3 Tbsp apricot or orange jam

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Grease and flour your cake pan.
  3. In a mixing bowl, combine yogurt and sugar.
  4. Add in the eggs and vegetable oil.
  5. Sift in the flour, baking powder, and salt.
  6. Stir in the lemon zest and vanilla essence.
  7. Pour the batter into your prepared cake pan.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Once baked, allow the cake to cool slightly in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  10. Spread apricot or orange jam on top.

Notes

For variations, try adding berries, coconut, chocolate, or spices to customize your cake.
