Egg Fried Rice

A quick and comforting dish perfect for busy nights, Egg Fried Rice combines delicious flavors of scrambled eggs and mixed vegetables, making it both simple and versatile.

  • 2 cups cooked rice
  • 2 large eggs
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 tablespoons soy sauce
  • 2 tablespoons oil (vegetable or sesame)
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare the rice by cooking it according to the ratio of 1 cup rice to 2 cups water, then allow it to cool.
  2. Heat the oil in a large skillet or wok over medium-high heat.
  3. Scramble the eggs in the skillet for 1-2 minutes until soft and fluffy, then set aside.
  4. Stir-fry the mixed vegetables in the same skillet for 3-4 minutes.
  5. Add the prepped rice and mix it with the vegetables for 2-3 minutes.
  6. Season with soy sauce, salt, and pepper, and cook for another minute.
  7. Return the scrambled eggs back into the skillet and mix with the rice.
  8. Finish by stirring in chopped green onions and cooking for an additional 1-2 minutes.
  9. Serve the Egg Fried Rice hot, garnished with extra green onions if desired.
