Pumpkin Blondies

These pumpkin blondies are soft, chewy, and infused with the essence of autumn, featuring delicious white chocolate chips.

  • 2 cups all-purpose flour
  • 1 cup pumpkin puree
  • 1 large egg
  • 1/2 cup melted butter
  • 3/4 cup brown sugar
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking pan with parchment paper or grease it with butter.
  3. Mix the dry ingredients: In a medium bowl, whisk flour, baking powder, and a pinch of salt.
  4. Combine the wet ingredients: In a large bowl, whisk melted butter and brown sugar, then mix in egg and pumpkin puree.
  5. Combine wet and dry: Gradually stir dry ingredients into the wet mixture.
  6. Add the white chocolate chips and gently fold them in.
  7. Pour the batter into the prepared baking pan, smoothing out the top.
  8. Bake for 25-30 minutes or until the edges are golden and a toothpick comes out with a few moist crumbs.
  9. Cool the blondies for 10 minutes, then transfer them to a wire rack to cool completely before slicing into squares.

Notes

Dust with powdered sugar before serving, and enjoy with vanilla ice cream or whipped cream for an indulgent treat.
