French Toast Sausage Bake

A cozy French Toast Sausage Bake, perfect for brunch or a simple dinner. Buttery bread layered with savory sausage, soaked in a sweet custard mixture of eggs and milk.

  • 8 slices hearty bread (challah, brioche, or sourdough)
  • 1 lb spicy Italian sausage, crumbled
  • 6 large eggs
  • 2 cups whole milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • Maple syrup for drizzling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the crumbled sausage in a skillet over medium heat until browned (about 5–7 minutes). Drain excess fat.
  3. Prepare the bread by cutting it into 1-inch cubes.
  4. Whisk together the eggs, milk, vanilla extract, cinnamon, and a pinch of salt.
  5. Combine the bread cubes and sausage in a large bowl, pouring the custard mixture over and tossing to coat.
  6. Transfer to a greased 9×13 inch baking dish.
  7. Bake for 30-35 minutes until the top is golden and crispy.
  8. Cool for 10 minutes before slicing and serving with maple syrup.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven or microwave. Can be made a day ahead.
