  • Ramen Noodles
  • Cooked Chicken (Shredded)
  • Cucumber (Sliced)
  • Carrot (Shredded)

  • Sesame Oil
  • Rice Vinegar

Instructions

  1. Cook the Ramen Noodles: Begin by boiling water in a large pot. Once boiling, add in the ramen noodles and cook according to the package instructions—usually about 3-4 minutes. Don’t overcook them; you want them to be just tender with a bit of bite left. Once they’re perfectly al dente, drain them and rinse with cold water to stop the cooking process.
  2. Prepare the Vegetables: While your noodles are cooking, take a moment to prepare your veggies. Thinly slice the cucumber, shred the carrots, and slice the red bell pepper. For the green onions, chop off the root end and slice them thinly at an angle.
  3. Shred the Chicken: If you haven’t already, shred your cooked chicken into bite-sized pieces.
  4. Make the Dressing: In a small bowl, whisk together the soy sauce, sesame oil, and rice vinegar. Taste and adjust the flavors as needed.
  5. Combine It All: In a large mixing bowl, combine the cooked and cooled ramen noodles, shredded chicken, cucumber, shredded carrots, red bell pepper, and green onions. Pour the dressing over the top and gently toss everything together.
  6. Add Fresh Herbs and Seeds: Toss in the fresh cilantro and sesame seeds, giving it another gentle mix.
  7. Taste and Adjust: Take a moment to taste your creation and add any additional seasoning if needed.
  8. Chill Before Serving: Let the salad chill in the refrigerator for 15-30 minutes to enhance the flavors.
