Garlic Butter Beef Bites with Potatoes

  • 2 cups baby potatoes (halved)
  • 4 tablespoons garlic (minced)
  • 1/2 cup butter (unsalted)
  • Salt and pepper (to taste)
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Instructions

  1. Prepare the Ingredients: Cube the beef into bite-sized pieces and halve the baby potatoes.
  2. Season the Beef: Add the cubed beef to a mixing bowl, season with salt, pepper, and paprika; toss to coat.
  3. Sear the Beef: Heat a skillet over medium-high heat, melt 2 tablespoons of butter, and sear the beef for 2-3 minutes on each side until crusted.
  4. Add the Garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant.
  5. Throw in the Potatoes: Add the halved potatoes and remaining butter; toss to coat.
  6. Cover and Cook: Lower heat, cover, and cook for 15-20 minutes, stirring occasionally until the potatoes are tender.
  7. Finishing Touches: Adjust seasoning, and for extra crunch, increase heat for a couple more minutes.
  8. Plate and Enjoy: Serve on a platter with pan juices spooned over the top.

Notes
