Instructions

  1. Start by gathering all your ingredients—wash and halve the baby potatoes and cut beef stew meat into bite-sized pieces.
  2. If you have time, consider marinating the beef in olive oil and half of the garlic for 30 minutes to enhance flavor.
  3. In a large skillet, heat olive oil over medium-high heat and sear the beef bites until golden brown on all sides—about 3-4 minutes per side.
  4. Add halved baby potatoes to the same skillet; season with salt, smoked paprika, and a small amount of garlic, cooking for about 10 minutes.
  5. Return the beef to the skillet, add beef broth, garlic, onion powder, thyme, and rosemary; let simmer for about 5-7 minutes.
  6. Mix melted butter with remaining herbs and seasonings, then drizzle over the beef and potatoes.
  7. Give everything a good stir, taste, and adjust seasonings as needed.
  8. Serve the Garlic Butter Beef Bites hot, garnished with freshly chopped parsley.
