Gluten Free Lemon Cupcakes

  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with cupcake liners or grease it lightly.
  3. Mix together the almond flour, coconut flour, sugar, baking powder, and salt in a large bowl.
  4. Combine the eggs, applesauce, lemon juice, zest, and vanilla extract in a separate bowl.
  5. Incorporate the wet mixture into the dry ingredients and gently fold together.
  6. Fill each cupcake liner about 2/3 full with the batter.
  7. Bake for about 18–20 minutes until lightly golden.
  8. Cool in the pan for 5 minutes before transferring to a wire rack.

Notes

Consider dusting with powdered sugar or topping with a simple lemon glaze. Cupcakes can be enjoyed warm or at room temperature.
