Delicious Greek Chicken Bowls

A vibrant, wholesome dish featuring juicy marinated chicken, fresh veggies, fluffy grains, and zesty tzatziki sauce.

  • 2 boneless, skinless chicken breasts
  • 1 cup cooked rice or quinoa
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 1 bell pepper, diced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Marinate the Chicken: In a medium bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. In a ziplock bag or shallow dish, add the chicken breasts and pour the marinade over them. Seal the bag or cover the dish, then refrigerate for at least 30 minutes.
  2. Cook the Grains: Follow the package instructions to cook rice or quinoa, which takes about 15-20 minutes.
  3. Prepare the Tzatziki: In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, salt, and pepper. Mix until well combined and chill in the fridge.
  4. Grill the Chicken: Heat a grill or skillet over medium-high heat. Remove the chicken from the marinade, grill for about 6-7 minutes per side, or until it reaches an internal temperature of 165°F.
  5. Chop the Veggies: While the chicken rests, chop cucumber, cherry tomatoes, red onion, and bell pepper.
  6. Assemble the Bowls: Layer rice or quinoa at the bottom of your bowls, top with sliced grilled chicken, diced veggies, and drizzle with tzatziki sauce.

Notes

Feel free to customize with additional ingredients like feta cheese or olives. Serve family-style for a fun dining experience.
