  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt

  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Optional: chopped parsley for garnish

Instructions

  1. Prep your ingredients by chopping the onion, mincing the garlic, and dicing the potatoes into even-sized chunks.
  2. Heat up 2 tablespoons of olive oil in a large skillet over medium heat and sauté the chopped onions for about 3-4 minutes.
  3. Add the minced garlic to the skillet and cook for about 1 minute until fragrant.
  4. Introduce the ground turkey, breaking it up with a wooden spoon and seasoning it with salt, paprika, oregano, thyme, and black pepper. Cook for about 5-7 minutes.
  5. Toss in the diced potatoes, and stir to coat them with the mixture. Add a splash of water or chicken broth, cover, and let simmer for about 15-20 minutes.
  6. Taste a potato for tenderness and adjust seasoning as necessary.
  7. Serve the dish topped with chopped parsley for garnish.
