Healthy Date Oat Squares

Delicious and wholesome oat squares sweetened with dates, perfect for snacks or breakfast.

Ingredients

  • 1 cup rolled oats
  • 1 cup pitted dates, chopped
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare an 8-inch square baking dish with parchment paper.
  3. Mix the rolled oats, almond flour, baking powder, and salt in a bowl.
  4. Blend the chopped dates in a food processor until they form a sticky paste.
  5. Combine the melted coconut oil, honey (or maple syrup), and vanilla extract in another bowl.
  6. Bring the date mixture and wet ingredients into the dry ingredients and stir until well combined.
  7. Spread the mixture evenly in the prepared baking dish.
  8. Bake for 20-25 minutes or until the edges turn golden brown.
  9. Cool for 10 minutes in the pan before lifting out to cool completely.
  10. Slice into squares and enjoy!

Notes

These squares can be stored in an airtight container for up to five days or frozen for up to three months.
