Cosmic Brownie Bites

A healthier twist on a childhood favorite, these no-bake Cosmic Brownie Bites are deliciously chewy and chocolatey, perfect for satisfying cravings without the guilt.

Ingredients

  • 1 and 1/2 cups Medjool Dates, packed
  • 1 cup Almonds
  • 1 cup Walnuts
  • 1/4 cup Shredded Coconut
  • 1/4 cup Cocoa Powder
  • 2 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 12 tbsp Maple Syrup (only as needed)
  • 1/3 cup Candy-Coated Chocolate Chips

Instructions

  1. Prep the Dates by removing pits and soaking in hot water for about 10 minutes.
  2. Blend the Nuts until they resemble coarse flour.
  3. Combine Ingredients in the food processor and blend until well-combined.
  4. Taste and Sweeten, adding maple syrup if necessary.
  5. Mix In the Chocolate Chips until evenly distributed.
  6. Form the Bites into small balls and place on a parchment-lined tray.
  7. Chill in the fridge for at least 30 minutes to set.
  8. Enjoy as a delightful snack!

Notes

These bites can be customized with different nuts, sweeteners, or mix-ins for variety.
