Healthy Raspberry Oatmeal Cookies

Delightful and wholesome cookies made with rolled oats and fresh raspberries, perfect for snacking or breakfast.

  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup coconut oil or unsalted butter, melted
  • 1/2 cup brown sugar
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking sheet by lining it with parchment paper.
  3. Mix the dry ingredients in a bowl: rolled oats, whole wheat flour, baking soda, and salt.
  4. Combine the wet ingredients in a separate bowl: melted coconut oil, brown sugar, honey, and vanilla extract.
  5. Bring the wet mixture into the dry ingredients and stir gently until combined.
  6. Fold in the fresh raspberries carefully to avoid crushing them.
  7. Scoop the dough onto the baking sheet, leaving space between each cookie.
  8. Bake for 10–12 minutes until the edges are golden brown.
  9. Cool on a baking sheet for a few minutes before transferring to a wire rack.

Notes

For a gluten-free option, use certified gluten-free oats. Store in an airtight container for up to a week.
