Protein Azuki Vanilla Mousse

A silky, protein-packed mousse combining the unique flavor of azuki beans with creamy goodness.

  • 1 cup Greek yogurt or skyr
  • ½ cup light cream cheese
  • 1 scoop (about 30g) protein powder (vanilla recommended)
  • 1 cup prepared azuki beans (canned or cooked from scratch)
  • 1 tablespoon natural sweetener (honey, maple syrup, or stevia)
  • Optional: matcha, yuzu zest, or a splash of saké for flavor

Instructions

  1. Prepare the azuki beans: If using dried beans, soak overnight, then boil until tender (about 30 minutes). If using canned, drain and rinse.
  2. Blend the creamy base: In a bowl, combine yogurt, cream cheese, and protein powder. Mix until smooth.
  3. Incorporate the azuki beans: Gently fold them into the creamy mixture, keeping some intact for texture.
  4. Sweeten to taste: Drizzle in your chosen sweetener, starting with 1 tablespoon.
  5. Chill and set: Spoon into serving bowls and refrigerate for at least 2 hours.
  6. Serve and garnish: Top with leftover yogurt and crushed nuts or honey before serving.

Notes

For a unique twist, try adding cocoa powder for chocolate mousse or matcha for green tea flavor. Adjust sweetener according to taste.
