High-Protein Chicken Ranch Quesadilla

A comforting twist on a classic quesadilla, packed with flavor and high in protein, featuring tender chicken, creamy cheese, and a hint of ranch flavor.

  • 2 Low-Carb Tortillas
  • 1 Cup Cooked, Shredded Chicken
  • 2 Tablespoons Greek Yogurt
  • 2 Wedges Laughing Cow Cheese
  • 1 Tablespoon Ranch Seasoning
  • 1 Cup Shredded Cheese (Optional)
  • Cooking Spray or Oil for the Pan

Instructions

  1. Prep your ingredients: Shred your cooked chicken if you haven’t already, and set it aside. Mix the Greek yogurt and ranch seasoning in a small bowl.
  2. Heat the pan: Preheat a non-stick skillet over medium heat. Spray or drizzle with oil.
  3. Assemble the quesadilla: Lay one tortilla flat. Spread half of the ranch yogurt mixture over one side. Top with half of the shredded chicken and a wedge of Laughing Cow cheese. Add additional shredded cheese if desired.
  4. Fold it up: Carefully fold the tortilla in half.
  5. Cook until golden: Place the folded quesadilla in the skillet. Cook for about 3-4 minutes on one side, then flip and cook for another 3-4 minutes.
  6. Slice and serve: Transfer the quesadilla to a cutting board, let it sit for a minute, then slice into wedges.
  7. Repeat the process with the second tortilla.

Notes

For an even cheesier quesadilla, consider adding cheese on both sides of the tortilla before folding it.
