Japanese Coffee Jelly Protein Cups

A refreshing dessert combining rich coffee flavor with creamy yogurt and protein goodness, perfect for breakfast or a post-workout snack.

Ingredients

  • 2 cups brewed strong coffee
  • 2 tablespoons powdered gelatin
  • 1/4 cup cold water
  • 1 cup Greek yogurt or dairy-free yogurt
  • 1 scoop protein powder (vanilla or chocolate)
  • 1 tablespoon light cream cheese or plant-based cream cheese
  • Sweetener (honey, maple syrup, or sugar substitute)
  • Optional: matcha powder, vanilla extract, or yuzu for flavor

Instructions

  1. Prepare the coffee jelly by brewing the coffee and letting it cool slightly.
  2. Mix the gelatin in a bowl with cold water and let it bloom for about 5 minutes.
  3. Combine the bloomed gelatin with the warm coffee, stirring until dissolved. Sweeten to taste.
  4. Set the coffee jelly by pouring it into a shallow dish and refrigerating for at least 2-3 hours.
  5. Prepare the yogurt layer by mixing Greek yogurt with protein powder and cream cheese until smooth.
  6. Assemble the cups by cutting the jelly into cubes and layering them in glass cups with the yogurt mixture.
  7. Top off with cocoa powder, cinnamon, or fresh berries and serve!

Notes

These protein cups are visually appealing when served in clear glass cups. They can last 2-3 days in the fridge, but best enjoyed fresh.
