  • 1 cup graham cracker crumbs (or almond flour for a gluten-free option)
  • 1/4 cup melted butter
  • Optional: matcha powder or adzuki beans for additional flavor

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and scrub the sweet potatoes, pierce with a fork, and roast for about 40-50 minutes until fork-tender.
  2. Combine the flesh of the sweet potatoes, Greek yogurt, light cream cheese, and protein powder in a large bowl until smooth.
  3. Add your natural sweetener of choice and any optional flavors like matcha powder, mixing well.
  4. Crush the graham crackers and mix with melted butter, then press into the bottom of a pie dish.
  5. Pour the sweet potato filling over the crust and bake for about 40-45 minutes until set around the edges.
  6. Cool the cheesecake completely, then refrigerate for at least 4 hours or overnight.
