  • 1 cup Light Cream Cheese
  • 1/2 cup Red Bean Paste
  • 1/2 cup Protein Powder (vanilla or plant-based)
  • 1/4 cup Natural Sweetener (maple syrup or honey)
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Matcha Powder (optional)

Instructions

  1. Prepare your pan by greasing a 9-inch springform pan and preheating your oven to 325°F (160°C).
  2. Mix together Greek yogurt, light cream cheese, and red bean paste until smooth.
  3. Incorporate protein powder gradually and blend until thick and creamy.
  4. Sweeten the mixture by adding in your natural sweetener and adjusting to taste.
  5. Flavor it up with vanilla and optional matcha powder, whisking until combined.
  6. Prepare the springform by pouring in the cheesecake filling and smoothing the top.
  7. Bake for 35-40 minutes until edges are set and center jiggles slightly.
  8. Cool in the oven for an hour before chilling in the fridge for at least 4 hours.
  9. Serve topped with whipped cream, matcha, or extra red bean paste.
