Honey Mustard Bacon Rice Casserole

A warm and comforting casserole combining crispy bacon, honey mustard glaze, and fluffy rice, perfect for family gatherings.

  • 2 cups cooked rice
  • 6 strips of bacon
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 cup shredded cheese (cheddar or your favorite mix)
  • 1 cup broccoli florets (fresh or frozen)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon strips in a skillet over medium-high heat until crispy, about 5-7 minutes.
  3. Mix together the honey and Dijon mustard in a bowl until well combined.
  4. Combine the cooked rice, bacon pieces, broccoli, half of the cheese, and honey-mustard mixture in a large mixing bowl.
  5. Transfer the mixture to a lightly greased baking dish and spread it evenly.
  6. Top with the remaining cheese and bake for about 30 minutes, or until the cheese is bubbly and golden.

Notes

This casserole can be made ahead of time and stored in the fridge; just adjust the baking time if cold from the fridge.
