Italian Grinder Salad

A vibrant and hearty salad that combines the best elements of a classic Italian sub with fresh greens, savory meats, and tangy cheese.

  • 6 oz Salami, sliced
  • 4 cups Lettuce (Romaine and Arugula mix)
  • 4 oz Pepperoni, sliced
  • 4 oz Provolone Cheese, cubed
  • 1 cup Cherry Tomatoes, halved
  • 1/2 cup Red Onions, thinly sliced
  • 1/2 cup Olives (Kalamata or Green)
  • 1/4 cup Olive Oil
  • 2 tbsp Red Wine Vinegar
  • 1 tsp Dijon Mustard
  • Salt and Pepper, to taste

Instructions

  1. Prep your greens by washing and drying the lettuce and arugula.
  2. Chop the tomatoes and soak the red onions in cold water to mellow the flavor.
  3. Slice the salami and pepperoni into bite-sized pieces, and cut the provolone cheese.
  4. Mix all the greens, tomatoes, onions, meats, and cheese in a mixing bowl.
  5. Add the olives, and drizzle the vinaigrette dressing over the salad.
  6. Let the salad chill in the fridge for 15 minutes to enhance the flavors.
  7. Taste and adjust seasoning before serving.
