Keto Avocado Egg Salad

A creamy, keto-friendly Avocado Egg Salad that’s rich in healthy fats, packed with protein, and perfect for any meal.

Ingredients

  • 2 ripe avocados
  • 4 hard-boiled eggs
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Chopped fresh herbs (optional)

Instructions

  1. Hard-Boil the eggs by placing them in a saucepan and covering with cold water. Bring to a boil, then cover and remove from heat for 12 minutes.
  2. Prepare the avocados by cutting them in half, removing the pit, and mashing the flesh in a bowl.
  3. Mix in the mayonnaise until fully combined with the avocado.
  4. Incorporate the chopped hard-boiled eggs into the avocado mixture gently.
  5. Add the lemon juice, salt, and pepper to taste.
  6. Garnish with fresh herbs if desired before serving.

Notes

For a chunkier texture, don’t over-mix the eggs. Add a splash of lemon juice to prevent browning of the avocado.
