Lemon Blueberry Cheesecake Cookies

  • 1 egg
  • 1 tablespoon lemon juice

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder

  • 1 cup blueberries, fresh or frozen
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and sugar using an electric mixer until light and fluffy (about 2-3 minutes).
  3. Add the egg, lemon juice, and lemon zest, mixing until well combined.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. Slowly add the dry mixture to the wet ingredients, mixing on low speed until just combined.
  6. Fold in the blueberries gently with a spatula.
  7. Mix the softened cream cheese, powdered sugar, and vanilla extract in another bowl until smooth.
  8. Scoop out a ball of cookie dough, flatten it slightly in your palm, and add a small spoonful of cheesecake filling to the center. Top with another scoop of dough and seal the edges.
  9. Place on the baking sheet and bake for 12-15 minutes until lightly golden.
  10. Cool on a wire rack for about 5 minutes before transferring.
