Lemon Coriander Soya Rice

A heartwarming and vibrant dish of rice with soya, lemon, and fresh coriander, perfect for any occasion.

  • 1 cup soya granules
  • 1 cup rice
  • 2 cups water
  • 1 lemon (juiced and zested)
  • 1/2 cup fresh coriander (chopped)
  • 2 tablespoons olive oil
  • 1 teaspoon cumin seeds
  • Salt to taste
  • Pepper to taste

Instructions

  1. Gather all your ingredients and chop up the fresh coriander. Zest the lemon into a bowl and then juice it.
  2. Bring 2 cups of water to a boil in a medium saucepan. Add in your rice along with a pinch of salt and stir gently. Cover and reduce the heat to low.
  3. Place soya granules in a bowl, pour boiling water over them, and let soak for about 10 minutes, then drain.
  4. Heat olive oil in a skillet over medium heat, add cumin seeds, and let them sizzle for about 30 seconds. Then add the soaked soya granules and sauté for about 5 minutes.
  5. Once the rice is cooked, gently fold it into the skillet with the sautéed soya, then add lemon zest, lemon juice, and chopped coriander.
  6. Taste and adjust salt and pepper according to your preference before serving.

Notes

Enhance with a splash of soy sauce or sesame oil for added flavor. Store leftovers in an airtight container in the fridge for up to 3-4 days.
