Loaded Burrito Potato Boats

Delicious baked potato halves stuffed with taco meat, cheese, and fresh toppings, perfect for cozy gatherings.

  • 4 medium-sized russet potatoes
  • 1 lb ground beef, chicken, turkey, or crumbled tofu
  • 2 tbsp taco seasoning
  • ½ cup salsa
  • 1 cup shredded cheddar cheese (or a blend)
  • ½ cup sour cream (or Greek yogurt)
  • ¼ cup chopped green onions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the potatoes, then wrap each in aluminum foil.
  3. Bake the potatoes for about 45-60 minutes, until fork-tender.
  4. Heat a skillet over medium heat and add the ground meat, cooking it until browned.
  5. Mix in the taco seasoning and cook until well combined.
  6. Stir in the salsa and let it simmer for a couple of minutes.
  7. Unwrap the baked potatoes, cut in half lengthwise, and fluff the insides.
  8. Spoon the taco meat mixture into each potato half.
  9. Top with shredded cheese.
  10. Return to oven for an additional 10-15 minutes until cheese is melted.
  11. Dress with sour cream and green onions before serving.
