  • 2 cups cheddar cheese, shredded
  • 2 cups whole milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Fresh herbs (like parsley or cilantro), for garnish

Instructions

  1. Cook the macaroni: Bring a large pot of salted water to a boil and cook the elbow macaroni until al dente, about 8-10 minutes. Drain and set aside.
  2. Prepare the falafel: Heat falafel in a skillet over medium heat until golden brown and crispy, about 5-7 minutes per side. Chop into bite-sized pieces.
  3. Make the cheese sauce: In a large saucepan, heat milk over medium heat until warm. Whisk in garlic powder, onion powder, and a pinch of salt and pepper. Gradually whisk in cheddar cheese, melting slowly over low heat for 5-10 minutes.
  4. Combine it all: Stir the cooked macaroni into the cheese sauce until fully coated. Add falafel, crumbled feta, and fresh herbs, mixing gently to combine.
  5. Adjust the seasoning: Taste and add more salt and pepper if necessary.
  6. Serve warm, garnished with extra feta and herbs as desired.
