A fusion of comfort food and taco zest, this Loaded Potato Taco Bowl features fluffy potatoes topped with seasoned meat, black beans, corn, and fresh toppings.

  • 4 large potatoes, diced
  • 1 lb ground beef or turkey
  • 1 can black beans, drained
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded cheese
  • 1 tsp taco seasoning
  • Salt and pepper to taste
  • Olive oil
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Dice the potatoes into small cubes—about 1-inch pieces.
  3. Place the diced potatoes in a bowl, drizzle with olive oil, then sprinkle with salt and pepper. Toss until well coated.
  4. Spread the diced potatoes evenly onto a baking sheet and roast for about 25-30 minutes.
  5. Heat a large skillet over medium heat, add olive oil, and throw in the ground beef or turkey.
  6. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
  7. Add taco seasoning, diced tomatoes, black beans, and corn to the skillet. Season with salt and pepper.
  8. Simmer for about 5-10 minutes, allowing flavors to meld.
  9. Remove the roasted potatoes from the oven and set aside.
  10. Assemble your bowls by layering the roasted potatoes at the bottom and topping with the meat mixture.
  11. Add diced avocado, shredded cheese, and finish with fresh cilantro.
