Zucchini BBQ Pulled Pork Boats

  • 2 medium zucchinis
  • 2 cups pulled pork
  • 1 cup BBQ sauce
  • 1 cup shredded cheese (optional)
  • Fresh herbs (cilantro or parsley)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the zucchinis by cutting them in half lengthwise and scooping out the seeds.
  3. Season the inside of each zucchini half with olive oil, salt, and pepper.
  4. Stuff the zucchini with pulled pork mixed with BBQ sauce.
  5. Sprinkle cheese on top if using.
  6. Bake for 25-30 minutes until the zucchini is tender and cheese is bubbly.
  7. Garnish with fresh herbs before serving.
