Masala Macaroni Pasta

A comforting twist on a classic dish that combines Italian macaroni pasta with vibrant Indian spices.

  • 200g Macaroni Pasta
  • 2 tablespoons Oil
  • 4 cloves Garlic, minced
  • 1 Onion, chopped
  • 1 Bell Pepper, chopped
  • 1 cup Mixed Vegetables (carrots, peas, beans)
  • 2 tablespoons Masala (curry powder or garam masala)
  • Salt to taste
  • Chili sauce to taste
  • Fresh Coriander for garnish

Instructions

  1. Cook the Pasta: Fill a large pot with salted water and bring it to a boil. Add the macaroni pasta and cook according to package instructions until al dente.
  2. Sauté the Veggies: While the pasta is cooking, heat the oil in a large skillet over medium heat. Add the minced garlic and chopped onions. Sauté for about 2-3 minutes until the onions are translucent and the garlic is fragrant.
  3. Add the Bell Pepper: Toss in the chopped bell pepper and continue cooking for another 3 minutes, until it starts to soften.
  4. Mix in the Mixed Vegetables: Add your mixed vegetables and sauté for 5 more minutes until everything is well combined and tender.
  5. Spice It Up: Sprinkle the masala over the veggies. Add salt and chili sauce to your preferred taste.
  6. Combine Pasta and Sauce: Add the drained macaroni to your sautéed veggie mix. Pour in reserved pasta water a little at a time until you reach your desired consistency.
  7. Garnish and Serve: Once combined, remove from heat and garnish with fresh coriander.

Notes

Store any leftovers in an airtight container in the fridge for up to 3-4 days. Reheat on the stovetop with a splash of water to bring it back to life!
