A refreshing Mediterranean Chickpea Salad bursting with flavors and colors, perfect for a light meal or side dish.

  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Prep Your Ingredients: Wash and chop all your veggies.
  2. Drain and Rinse the Chickpeas: Open the can of chickpeas and rinse under cold water.
  3. Dice Your Veggies: Cut cucumber and bell peppers into bite-sized pieces, and halve the cherry tomatoes.
  4. Chop the Onion and Parsley: Finely chop the red onion and coarsely chop the parsley.
  5. Combine the Ingredients: In a large mixing bowl, combine the chickpeas, cucumber, bell pepper, cherry tomatoes, onion, and parsley.
  6. Make the Dressing: In a small bowl, mix olive oil, lemon juice, oregano, salt, and pepper.
  7. Dress the Salad: Pour the dressing over the salad and toss gently.
  8. Add Feta Cheese: Crumble the feta cheese on top and give a gentle toss.
  9. Taste and Adjust: Check the flavor and adjust seasoning if necessary.
  10. Chill and Serve: Let the salad chill in the fridge for at least 30 minutes before serving.
