Mediterranean Greek Salad

A vibrant and refreshing Greek salad featuring sun-ripened tomatoes, crisp cucumbers, bold olives, and creamy feta, all tossed in a flavorful dressing.

Ingredients

  • 1 large head Romaine lettuce
  • 4 medium ripe tomatoes, cut into bite-sized chunks
  • 1 large English cucumber
  • 1 medium green bell pepper
  • 1 small red onion
  • 1/2 cup of pitted Kalamata olives
  • 8 ounces of authentic Greek feta cheese
  • 3 tablespoons of fresh dill or mint, roughly chopped
  • 1/2 cup of high-quality extra virgin olive oil
  • 1/2 cup of red wine vinegar
  • 1 teaspoon of dried Greek oregano
  • 1 small garlic clove, minced
  • 1/2 teaspoon of Dijon mustard
  • 1/2 teaspoon of sea salt
  • 1/4 teaspoon of freshly ground black pepper

Instructions

  1. Prepare the base by washing and drying the Romaine lettuce. Tear it into bite-sized pieces and place in a large salad bowl.
  2. Chop the tomatoes into bite-sized chunks and add them to the bowl.
  3. Add sliced cucumber to the bowl.
  4. Slice the green bell pepper into strips or chunks and toss them in.
  5. Add thinly sliced red onion to the bowl.
  6. Pour in the Kalamata olives, rough chopped if whole.
  7. Crumble the feta cheese on top of the salad.
  8. Sprinkle fresh dill or mint over the salad.
  9. Whisk together olive oil, red wine vinegar, minced garlic, dried oregano, Dijon mustard, salt, and pepper in a small bowl.
  10. Pour the dressing over the salad and gently toss to combine.
  11. Let the salad sit for about 10 minutes before serving to meld flavors.

Notes

Best served fresh, but can be prepped ahead of time. Dress just before serving to avoid sogginess.
