Mediterranean Zucchini Hummus Boats

Light and refreshing zucchini boats filled with creamy hummus, topped with tangy olives, perfect as an appetizer or side dish.

Ingredients

  • 2 small to medium Zucchini
  • 1 cup Hummus
  • ½ cup Kalamata or green Olives, chopped
  • 1 cup Cherry Tomatoes, halved (optional)
  • ½ cup Feta Cheese, crumbled (optional)
  • Fresh Herbs (parsley or basil, optional)
  • Olive Oil for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prep the zucchinis: wash, trim the ends, cut in half lengthwise, and scoop out the center to create boats.
  3. Fill the zucchini with a generous amount of hummus.
  4. Add olives and cherry tomatoes over the hummus-filled boats.
  5. Sprinkle feta cheese on top if using.
  6. Bake for 20-25 minutes until zucchini is tender.
  7. Garnish with fresh herbs and drizzle with olive oil before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 2-3 days. Reheat in the oven or microwave.
