Korean BBQ Potato Bowls

Heartwarming bowls filled with savory beef, tender potatoes, and Korean BBQ sauce.

Ingredients

  • 2 Yukon Gold or Russet potatoes, cubed
  • 1 lb thinly sliced beef (flank or sirloin)
  • 1/2 cup Korean BBQ sauce
  • 1 cup steamed broccoli (optional)
  • 1 bell pepper, sliced (optional)
  • 1/2 cup pickled cucumbers (optional)
  • 1 tbsp sesame seeds

Instructions

  1. Prep your potatoes: Wash and peel the potatoes, cutting them into bite-sized cubes.
  2. Boil those spuds: Place the potatoes in salted water, bring to a boil, and cook for 10-15 minutes until fork-tender.
  3. Get your beef ready: Slice the beef thinly against the grain, marinate with Korean BBQ sauce.
  4. Sauté the beef: Heat oil in a skillet, cook the marinated beef for about 4-5 minutes until browned.
  5. Mash those potatoes: Drain potatoes and mash with butter and salt, if desired.
  6. Assemble your bowls: Layer potatoes, beef, and additional BBQ sauce in bowls.
  7. Garnish: Top with sesame seeds and sliced green onions.

Notes

Serve with kimchi or a fresh cucumber salad for an extra delight. You can also try using other vegetables in your bowls.
