Oreo Cheesecake Cookies

Delightful cookies that merge the classic crunch of Oreos with the creamy goodness of cheesecake.

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup crushed Oreos
  • 1 cup cheesecake filling (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Incorporate the eggs one at a time, mixing thoroughly after each addition, then mix in the vanilla extract.
  4. Combine the flour, baking soda, and salt in a separate bowl, then gradually add it to the wet ingredients.
  5. Add the crushed Oreos and cheesecake filling, folding until well distributed.
  6. Scoop spoonfuls of cookie dough onto a prepared baking sheet, spacing them a couple of inches apart.
  7. Bake for 10-12 minutes until edges are lightly golden.
  8. Cool on the baking sheet for about 5 minutes before transferring to a wire rack.
