Warm and Delightful Apple Cider Pancakes

  • 2 tsp baking powder
  • 1 cup apple cider
  • 2 eggs
  • 2 tbsp brown sugar
  • 1 tsp cinnamon

Instructions

  1. Mix dry ingredients: In a large mixing bowl, whisk together your flour, baking powder, and cinnamon.
  2. Combine wet ingredients: In another bowl, whisk together the eggs and brown sugar until bubbly and combined. Then pour in the apple cider, stirring gently.
  3. Combine the mixtures: Pour the wet ingredients into the dry mix, stirring until just combined.
  4. Heat the griddle: Preheat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
  5. Pour and cook: Using a ladle or measuring cup, pour 1/4 cup of the batter onto the skillet. Cook until bubbles form on the surface and edges look set.
  6. Serve warm: Stack them up on a plate and add extra cinnamon sugar or maple syrup on top!

Notes
