Loaded Grits Casserole

A warm, creamy casserole loaded with cheese, crispy bacon, and spices, perfect for cozy dinners or festive gatherings.

  • 1 cup stone-ground grits
  • 6 slices bacon
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1/2 cup milk or cream
  • 2 eggs
  • 1/4 cup sliced green onions
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon in a large skillet over medium heat until crispy, about 6-8 minutes, then remove and drain.
  3. Bring 4 cups of water to a boil in a medium pot, then whisk in the grits, cooking for 20-25 minutes until thick and creamy.
  4. Stir in butter, milk or cream, and eggs into the cooked grits until combined.
  5. Fold in the cheddar cheese and crumbled bacon, saving a bit for topping.
  6. Season with salt, pepper, and garlic powder.
  7. Transfer the mixture to a greased 9×13-inch baking dish and spread evenly.
  8. Top with remaining bacon, cheese, and sliced green onions.
  9. Bake for 30-35 minutes until golden brown and slightly puffed.
  10. Cool for a few minutes before serving.

Notes

Feel free to experiment with different spices or cheese varieties. This casserole can be made ahead of time and stored in the fridge overnight.
