Zucchini Jalapeño Popper Bites

A delightful twist on classic appetizers, these Zucchini Jalapeño Popper Bites combine creamy cheese and spicy jalapeños for a comforting snack.

  • 2 medium zucchinis
  • 8 oz cream cheese
  • 2 jalapeños, finely chopped
  • 1 cup shredded cheese (cheddar and mozzarella mix)
  • 1/2 cup breadcrumbs
  • 1 tsp garlic powder
  • 2 tbsp olive oil

Instructions

  1. Prep your zucchinis: wash, dry, cut in half lengthwise, and scoop out the seeds.
  2. Preheat the oven to 400°F (205°C).
  3. Make the filling by mixing cream cheese, shredded cheese, jalapeños, garlic powder, and breadcrumbs in a bowl.
  4. Stuff each zucchini half with the cream cheese mixture.
  5. Drizzle olive oil over the stuffed zucchinis and place them on a baking sheet.
  6. Bake for 20-25 minutes until golden and bubbly.
  7. Garnish with parsley or cilantro before serving.

Notes

Can be made ahead of time and stored in the fridge or frozen before baking.
