Crispy Zucchini Pizza Chips

A deliciously healthy twist on comfort food, these crispy zucchini pizza chips are perfect for snacking or as an appetizer.

  • 2 medium Zucchini, sliced into 1/4-inch rounds
  • 1 cup Mozzarella cheese, shredded
  • 1/2 cup Pepperoni slices
  • 2 tablespoons Olive oil
  • 1 tablespoon Italian seasoning
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry your zucchini. Slice them into about 1/4-inch thick rounds.
  3. Place the sliced zucchini rounds on a clean kitchen towel or paper towels. Sprinkle lightly with salt and let them sit for about 15 minutes.
  4. Pat the zucchini dry.
  5. Toss the zucchini rounds with olive oil, Italian seasoning, pepper, and a pinch of salt.
  6. Line a baking sheet with parchment paper and arrange the zucchini rounds in a single layer.
  7. Bake for about 15–20 minutes, flipping halfway through.
  8. Sprinkle mozzarella cheese and pepperoni on top of each zucchini round.
  9. Return to the oven for an additional 5–7 minutes, until cheese is melted.
  10. Cool for a few minutes before serving.

Notes

Serve with marinara sauce or zesty garlic ranch for dipping. These chips are best enjoyed fresh!
