Zucchini Bacon Cheeseburger Casserole

A hearty and comforting casserole that combines the flavors of a classic cheeseburger with the wholesome goodness of zucchini.

  • 1 pound ground beef
  • 46 strips of bacon
  • 2 medium zucchinis, sliced into half-moons
  • 1.5 cups shredded sharp cheddar cheese
  • 1.5 cups shredded mozzarella cheese
  • Worcestershire sauce to taste
  • Garlic powder, onion powder, salt, and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the bacon in a skillet over medium heat until crispy, then drain on paper towels.
  3. Brown the ground beef in the same skillet, seasoning with garlic powder, onion powder, salt, and pepper.
  4. Sauté the sliced zucchini in the skillet until slightly tender, about 5 minutes.
  5. Combine the bacon back into the beef and zucchini mixture, adding Worcestershire sauce if desired.
  6. Layer half of the beef-zucchini-bacon mixture into a greased 9×13 inch baking dish, then cover with 1.5 cups of cheese.
  7. Add the remaining beef mixture on top, followed by another layer of cheese and crumbled bacon if using.
  8. Bake for 25-30 minutes until the cheese is melty and golden brown, broiling if necessary for a crispier top.
  9. Cool for 5-10 minutes before serving.

Notes

Serve with fresh chopped parsley or diced green onions. Pair with a side salad or crusty bread.
