Zucchini Caprese Stacks

A fresh twist on the classic Caprese salad using layers of zucchini, mozzarella, and tomatoes, drizzled with balsamic vinegar.

Ingredients

  • Zucchini: medium-sized, firm
  • Mozzarella Cheese: fresh
  • Tomatoes: ripe, juicy
  • Balsamic Vinegar
  • Fresh Basil

Instructions

  1. Prep the ingredients: Wash zucchini, tomatoes, and basil, then slice zucchini into 1/4-inch rounds.
  2. Salt the zucchini: Layer slices in a dish, sprinkle with salt, and let sit for 15 minutes before patting dry.
  3. Sauté the zucchini: Cook zucchini slices in a skillet with olive oil for 2-3 minutes per side until golden and tender.
  4. Assemble the stacks: Layer zucchini, mozzarella, tomato, and basil for three layers.
  5. Drizzle with balsamic vinegar right before serving.
  6. Final touch: Add sea salt, black pepper, and olive oil.

Notes

These stacks can be prepped ahead of time but assemble just before serving to avoid sogginess.
