Zucchini Greek Yogurt Dip

A refreshing dip made with zucchini and Greek yogurt, perfect for summer gatherings.

Ingredients

  • 2 medium zucchinis
  • 1 cup plain Greek yogurt
  • 23 cloves of garlic (minced)
  • 1 tablespoon fresh dill (chopped)
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Wash your zucchinis thoroughly and grate them.
  2. Sprinkle the grated zucchini with salt and let sit for 10 minutes.
  3. Gather the zucchini in a kitchen towel and squeeze out the excess liquid.
  4. Add squeezed zucchini, Greek yogurt, minced garlic, chopped dill, lemon juice, salt, and pepper to a mixing bowl.
  5. Mix the ingredients using a fork or whisk.
  6. Taste the dip and adjust the flavors as needed.
  7. Cover the dip and let it chill in the refrigerator for at least 30 minutes.
  8. Serve the dip with a drizzle of olive oil and garnish with fresh dill.

Notes

Perfect with pita chips or fresh veggies. Can be made ahead of time and gets better as it sits.
