Mixed Berry Crumble Bars

Delicious mixed berry crumble bars with a buttery topping, perfect for any occasion.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1 1/2 cups large flake or old-fashioned oats
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1 cup butter (melted)
  • 1 large egg
  • 4 1/2 cups mixed berries
  • 1/2 cup white sugar (for berry filling)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 3 tablespoons cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your 9×13 inch baking dish by greasing it with butter or lining with parchment paper.
  3. Combine flour, oats, cinnamon, white sugar, and brown sugar in a large mixing bowl.
  4. Pour in melted butter and egg, mixing until just combined.
  5. Set aside 1 1/2 cups of the mixture for the topping.
  6. Press the remaining mixture into the bottom of your greased baking dish.
  7. Mix the mixed berries, white sugar, lemon juice, and cornstarch in another bowl.
  8. Spread the berry mixture evenly over the crust.
  9. Sprinkle the reserved crumble mixture over the top.
  10. Bake for 35-40 minutes, until golden brown and bubbly.
  11. Cool in the dish for 15 minutes, then lift out and cool completely before slicing.

Notes

Serve warm or at room temperature, optionally topped with vanilla ice cream.
