Homemade Mushroom Lasagna

A comforting and hearty Mushroom Lasagna filled with rich marinara sauce, savory mushrooms, and gooey cheese, perfect for family gatherings or cozy nights in.

  • 1 package lasagna noodles
  • 2 cups mushrooms, sliced
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 4 cups marinara sauce
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Bring a large pot of salted water to boil and cook the lasagna noodles until al dente, about 8-10 minutes. If using no-boil noodles, simply set them aside.
  2. Heat the olive oil in a large skillet over medium heat. Toss in the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
  3. Add the sliced mushrooms and sauté until golden brown, about 8-10 minutes.
  4. Pour in your marinara sauce and stir well, bringing it back to a gentle simmer. Season with salt and pepper.
  5. In a bowl, combine the ricotta cheese, half of the mozzarella, and half of the Parmesan cheese. Add salt and pepper and mix until creamy.
  6. In a 9×13 inch baking dish, spread a thin layer of the mushroom marinara sauce at the bottom. Layer with lasagna noodles, cheese mixture, more marinara sauce, and repeat until ingredients are used up, finishing with noodles, marinara, and remaining cheeses on top.
  7. Cover the lasagna with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until golden and bubbly.
  8. Remove from oven and let it rest for 15-20 minutes. Garnish with fresh basil before serving.

Notes

To enhance flavors, consider adding red pepper flakes or fresh herbs to the marinara. Serve with a light salad and a glass of red wine for an elevated experience.
