  • 16 ounces cream cheese, softened
  • ¼ cup heavy cream
  • ¼ cup honey
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the Pecan Crust: In a food processor, pulse the pecans until they resemble fine crumbs. Transfer the crushed pecans to a mixing bowl and stir in the melted butter and honey until combined.
  2. Assemble the Cups: Press a generous tablespoon of the pecan mixture into the bottom of each cup, creating a solid base.
  3. Make the Cheesecake Filling: In a large mixing bowl, add the softened cream cheese and whip until smooth and creamy. Gradually add in the heavy cream, honey, and lemon juice, mixing until fluffy.
  4. Fill the Cups: Carefully fill each cup with the creamy cheesecake mixture until just below the rim.
  5. Chill: Cover the cups with plastic wrap and refrigerate for at least 120 minutes or until set.
