No-Bake Cheesecake Parfaits

Delightful layered parfaits featuring creamy cheesecake, fresh blueberries, and crunchy vanilla wafers—perfect for summer gatherings!

  • 1 pint blueberries
  • 1 tablespoon granulated sugar
  • 8 ounces cream cheese (softened)
  • 3/4 cup vanilla Greek yogurt
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons confectioners’ sugar
  • 1/4 cup crumbled vanilla wafers
  • 1/2 pint raspberries

Instructions

  1. Combine the pint of blueberries with a tablespoon of granulated sugar in a small bowl and let them sit for about 10 minutes.
  2. Place softened cream cheese in a mixing bowl and beat until smooth. Add Greek yogurt, vanilla extract, and confectioners’ sugar, and blend until creamy.
  3. Layer the cream cheese filling, sugared blueberries, and crumbled vanilla wafers into jars, repeating until filled.
  4. Top with fresh raspberries and sprinkle more crumbled vanilla wafers on top.
  5. Cover the parfaits and chill in the fridge for at least 2 hours before serving.
  6. Garnish with a mint leaf or dusting of confectioners’ sugar if desired.
