No Bake Mini Dessert Cups

Delightful no-bake mini dessert cups with creamy filling, crunchy cookie crust, and rich caramel, topped with flaky sea salt.

  • 200g Biscoff Cookies (about 26 cookies), crushed
  • 6 tbsp Unsalted Butter, melted
  • 16 oz Cream Cheese, softened
  • ⅓ cup Sugar
  • 1 tsp Vanilla Extract
  • ⅓ cup Salted Caramel Sauce (plus extra for topping)
  • 2/3 cup Heavy Cream, cold
  • 1 cup Heavy Cream, whipped (for piping, optional)
  • Flaky Sea Salt (optional)

Instructions

  1. Crush the cookies in a food processor until fine crumbs form.
  2. Combine crushed cookies and melted butter in a bowl, mixing until resembling wet sand.
  3. Press the mixture firmly into the bottom of each serving cup and refrigerate to set.
  4. Beat softened cream cheese in a bowl until creamy, gradually adding sugar until well-blended.
  5. Add vanilla and caramel sauce, beating until combined.
  6. Whip cold heavy cream in a separate bowl until soft peaks form.
  7. Fold the whipped cream into the cream cheese mixture until no streaks remain.
  8. Layer the creamy filling over the cookie crusts in the dessert cups.
  9. Refrigerate the cups for about 30 minutes to meld flavors.
  10. Whip additional heavy cream until stiff peaks form for piping.
  11. Pipe or spoon the whipped cream on top of each dessert cup.
  12. Drizzle with extra salted caramel sauce and garnish with flaky sea salt.

Notes

These cups can be prepared a day in advance; just add toppings right before serving.
