No-Bake Nut and Date Bars

Delicious and nutritious no-bake bars made with Medjool dates, nuts, and oats, perfect for energy snacks or dessert.

  • 12 large Medjool dates, pitted
  • 1/2 cup almond or peanut butter
  • 3 tbsp maple syrup
  • 3/4 cup almonds, lightly toasted (optional)
  • 1 cup rolled oats
  • 1/4 cup chia seeds
  • 1/2 tsp vanilla extract
  • A pinch of salt

Instructions

  1. Toast the almonds (if using): Preheat your oven to 350°F (175°C). Spread the almonds in a single layer on a baking sheet and toast for about 10 minutes until golden brown.
  2. Prepare the dates: If your dates are stiff, soak them in warm water for about 10 minutes to soften. Drain and place in a food processor.
  3. Blend the dates: Pulse until they form a sticky paste, scraping down the sides as needed.
  4. Add the nut butter and maple syrup: Blend until smooth and creamy.
  5. Mix in the dry ingredients: In a large bowl, combine rolled oats, chia seeds, toasted almonds (if using), and a pinch of salt. Pour in the date mixture and stir until fully incorporated.
  6. Form the bars: Line an 8×8 inch baking dish with parchment paper. Transfer the mixture into the dish and press down firmly to create an even layer.
  7. Chill out: Refrigerate for at least 2 hours to help the bars set properly.
  8. Slice and serve: Remove from the dish and slice into squares or rectangles. Store in an airtight container in the fridge for up to a week.

Notes

Feel free to customize with chocolate chips, coconut, or dried fruits. These bars also freeze well.
