Oreo Cookie Cake

A delightful Oreo Cookie Cake that combines nostalgia and sweetness, perfect for any occasion.

  • 3/4 cup unsalted cultured butter (cool room temperature)
  • 1 cup light brown sugar (packed)
  • 1/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract
  • 2 1/3 cups all-purpose flour
  • 2 cups chopped Oreos
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 6 tablespoons unsalted butter (room temperature)
  • 1 cup powdered sugar
  • 2 teaspoons heavy cream
  • 1/2 teaspoon vanilla extract
  • Pinch fine sea salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your cake pans by greasing and flouring them.
  3. Cream together the cultured butter, brown sugar, and granulated sugar until fluffy.
  4. Add in the eggs, egg yolk, and vanilla extract one at a time.
  5. Mix the flour, baking soda, and sea salt in a separate bowl.
  6. Combine the dry and wet ingredients, alternating with chopped Oreos.
  7. Pour the batter into the prepared pans and bake for 25-30 minutes.
  8. Cool the cakes in the pans for 10 minutes before transferring to wire racks.
  9. Make the frosting by beating the room-temperature butter and gradually adding powdered sugar, heavy cream, vanilla extract, and salt.
  10. Frost the cooled cakes, layering with additional Oreos if desired.

Notes

For a gluten-free version, use gluten-free Oreos and flour. Consider adding mint extract to the frosting for a twist.
