Peach Mousse Parfaits

A delightful summer dessert featuring layers of creamy Greek yogurt mousse, fresh peaches, and a buttery graham cracker crust.

  • 1 cup crushed graham crackers
  • 2 tbsp melted butter
  • 1 cup heavy whipping cream
  • 1 cup Greek yogurt
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 2 fresh peaches, diced
  • Mint for garnish

Instructions

  1. Prepare the crust: In a mixing bowl, combine the crushed graham crackers and melted butter. Stir until the mixture resembles wet sand.
  2. Create the graham cracker base: Press the mixture into the bottom of your serving glasses or parfait cups.
  3. Whip the cream: In a large bowl, whip the heavy cream until stiff peaks form.
  4. Assemble the mousse: In another bowl, mix Greek yogurt, honey, and vanilla extract until smooth. Gently fold in the whipped cream.
  5. Prepare the peaches: Gently fold diced peaches into the mousse mixture.
  6. Layer the parfaits: Spoon mousse into glasses starting with a layer on top of the graham cracker base and add more peaches, repeating until full.
  7. Chill and garnish: Place parfaits in the refrigerator for at least an hour. Top each with mint and reserved peach pieces before serving.

Notes

These parfaits can be made a few hours in advance and stored in the refrigerator. Substitute peaches with other fruits or use different sweeteners for variations.
