No-Bake Strawberry Cheesecake Cups

Delightful no-bake strawberry cheesecake cups with a buttery graham cracker crust and fresh strawberries, perfect for any occasion.

  • 1 cup crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh strawberries, sliced
  • Extra strawberries for garnish

Instructions

  1. Prepare the Crust
    In a mixing bowl, combine the crushed graham crackers and melted butter. Use a fork to combine until all crumbs are moistened. Spoon the mixture evenly into the bottom of your serving cups, pressing down firmly to form a crust.
  2. Create the Cheesecake Filling
    In a large mixing bowl, beat the softened cream cheese on medium speed until smooth and creamy. Gradually add in the powdered sugar and vanilla extract, mixing until fully combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  3. Assemble the Cups
    Spoon the cheesecake filling into the crusted cups, filling them about 3/4 of the way up. Once all cups are filled, top each one with sliced strawberries.
  4. Chill and Serve
    Refrigerate for at least 240 minutes, or overnight if you can. Garnish with additional strawberries before serving.

Notes
