No-Bake Strawberry Cheesecake Parfaits

Delightful no-bake parfaits with layers of creamy cheesecake, fresh strawberries, and crunchy graham cracker crumbs, perfect for summer gatherings.

Ingredients

  • 1 lb fresh strawberries
  • 1/4 cup granulated sugar
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 sleeve graham crackers (or 1.5 cups graham cracker crumbs)
  • 1/4 cup unsalted butter, melted
  • Two 8-ounce blocks of cream cheese, softened
  • 14-ounce can of sweetened condensed milk
  • 1 teaspoon vanilla paste or vanilla extract

Instructions

  1. Prepare the Strawberries by washing and slicing them, then macerate with sugar, lemon zest, and lemon juice for 15-20 minutes.
  2. Make the Graham Cracker Base by crushing the crackers and mixing with melted butter.
  3. Prepare the Cheesecake Filling by beating cream cheese and adding sweetened condensed milk and vanilla until fluffy.
  4. Layer the Parfaits in cups with graham cracker mixture, cheesecake filling, and macerated strawberries, repeating layers until filled.
  5. Chill in the refrigerator for at least 2-3 hours to set.
  6. Serve and enjoy your delightful parfaits, optionally garnished with whipped cream or mint.
